 Ingredients for No-Bake Mango Cheesecake:

  • 190 g digestive biscuits (about 6.7 oz)

  • 80 g unsalted butter (about 1/3 cup), melted

  • 300 g full-fat cream cheese, room temperature

  • 250 g unsweetened Greek yogurt, room temperature

  • 60 g powdered sugar, sifted

  • 250 g mango puree (about 1 cup)

  • 1 tablespoon lime juice

  • 125 ml whipping cream (min 35% fat), chilled

  • More mango puree

  • Fresh mango cubes

 How to Make No-Bake Mango Cheesecake Step-by-Step:

Step-1:Prepare the base

Place biscuits in a ziplock bag and crush them into fine crumbs using a rolling pin (or use a food processor).Mix the crumbs with melted butter until well combined.Divide the mixture evenly into muffin liners or a springform pan. Press down firmly with the back of a spoon to compact.Place in the freezer for 30 minutes to set.

Peel and chop a ripe mango, then blend the flesh with lime juice until smooth.Measure out 1 cup (250 g) of this puree for the filling.

In a bowl, beat the cream cheese with a hand mixer until fluffy.Add powdered sugar and Greek yogurt; mix well.Add in the mango puree and mix again until smooth1.In a separate bowl, whip the chilled cream until stiff peaks form.

Spoon the filling over the chilled biscuit base, smoothing the top with a spatula.Place in the freezer (not fridge) for at least 3 hours, or until firm.
