Step by step process:
Step-1: Prepare the tandoori Marinade
Mix yogurt (or a dairy-free alternative) with tandoori masala, garam masala, coriander powder, cumin powder, red chili powder, salt, and black pepper to form a flavorful marinade.

Step-2: Cook the vegetables
Heat oil (such as ghee or avocado oil) in a pan over medium-high heat.Sauté sliced onions, grated garlic, and grated ginger until golden brown.Add frozen or fresh bell peppers and the prepared tandoori marinade. Cook for a few minutes until the moisture from the yogurt evaporates.Add sliced mushrooms (cremini or baby bella preferred) and sauté until all moisture evaporates and mushrooms are cooked through. Set aside

Step-3: Prepare the Quesadilla Filling
